There wouldn't be any problem going over existing tile. Keep in mind the floor needs to be flat within tolerance, 1/4" - 10' or 1/8" - 6', the increased height may be an issue at some transitions.
In commercial kitchens enzime cleaners are often used. This type of cleaner should not be used.
