We have an old 1916 Craftsman home we just bought. Because of mold damage we gutted the entire kitchen area. So....right now there is just OSB subfloor. No cabinets. Do we need to build up the area where the cabinets will be, to match the tile height?

It is usually best to build-up the area under the cabinets to the same height as the tile. It helps with under-cabinet applicances such as dishwashers or trash compactors. You could even put the tile under the cabinets (but that would be more expensive per sf). The Avaire tiles are roughly 14 mm thick (slightly under 9/16 of an inch). Make sure your OSB is flat before you install Avaire - you can knock-down any high spots or seams with a sander.
