Doing the floor in sections is'nt a problem at all. Even if you install the whole floor you can walk on it right away. If you wanted to you could grout the whole floor except the area needed to get to the stairs, grouting the floor in sections works well also.

Tiling a room in sections

I am going to be tiling our kitchen, which is a large room and the only access to our basement. It will not be possible to cut of traffic to the basement entirely because thats where my kids sleep so is it possible to tile the room in sections,doing half of the room one day and the other the next thus allowing access to the basement door? I am concerned about doing the entire room and not allowing enough curing time before people walk on it.
